Veggie Stir-Fry with Tofu

Ingredients:

  • 1 block of tofu, pressed and cubed
  • Assorted vegetables (such as bell peppers, broccoli, carrots, snap peas)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper
  • Cooked rice or noodles (optional, for serving)

Instructions:

  1. In a large skillet or wok, heat the sesame oil over medium-high heat.
  2. Add the minced garlic and grated ginger, and sauté for 1 minute.
  3. Add the tofu cubes and cook until lightly browned.
  4. Add the vegetables and stir-fry for a few minutes until tender-crisp.
  5. In a small bowl, whisk together the soy sauce, salt, and pepper.
  6. Pour the sauce over the vegetables and tofu, and toss to coat evenly.
  7. Continue cooking for another 2-3 minutes.
  8. Serve hot over cooked rice or noodles if desired.
