Ingredients:
- 1 block of tofu, pressed and cubed
- Assorted vegetables (such as bell peppers, broccoli, carrots, snap peas)
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper
- Cooked rice or noodles (optional, for serving)
Instructions:
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the minced garlic and grated ginger, and sauté for 1 minute.
- Add the tofu cubes and cook until lightly browned.
- Add the vegetables and stir-fry for a few minutes until tender-crisp.
- In a small bowl, whisk together the soy sauce, salt, and pepper.
- Pour the sauce over the vegetables and tofu, and toss to coat evenly.
- Continue cooking for another 2-3 minutes.
- Serve hot over cooked rice or noodles if desired.
